Charleen’s Cheesecake

This is THE BEST cheesecake. My friend, Charleen used to make one for my birthday every year. She’s gone now, and I make her cheesecake for myself and family in her memory for every occasion. #july2026

This is THE BEST cheesecake. My friend, Charleen used to make one for my birthday every year. She’s gone now, and I make her cheesecake for myself and family in her memory for every occasion. #july2026
Steps
- 1
The following ingredients MUST be at room temperature BEFORE mixing!!! Cream cheese, eggs and sour cream.
- 2
Preheat oven to 315*. Grease springform pan really well. Pour crumbs into pan. Pack the crumbs down and up the sides a bit. Set aside.
- 3
Cream cheese in mixer bowl and beat well. Add sugar and continue to beat. Add eggs one at a time. Add vanilla. Pour over crumbs into pan.
- 4
Bake at 315* for 1 hour and 20 minutes. Let cool 20 minutes or until center of cake sinks slightly.
- 5
Mix sour cream, sugar and vanilla until smooth. Spread to within 1/4” of edges. Put back into oven on 315* bake 10 minutes and turn off heat. Let cake remain in oven until the oven is cool. Chill cake in refrigerator for 8 hours or overnight before releasing from springform pan. Store in refrigerator.
- 6
Optional: serve by itself (my favorite) or add some strawberries or blueberries, etc.
