Ingredients

Total Time: 35–40 minutes
Servings: 4 servings
  1. For the Dhokla Batter:
  2. Blend Together:
  3. 1/2 cupyellow moong dal (soaked for 3–4 hours)
  4. 1/4 cupcurd (optional – for fermentation & softness)
  5. 2 tbspwater
  6. 3green chilies
  7. 1 inchginger
  8. 2garlic cloves (optional)
  9. 1 tspsugar
  10. 1 tspsalt
  11. Additional
  12. 1/4 tspbaking soda or Eno fruit salt (just before steaming)
  13. 1 tsplemon juice (to activate leavening)
  14. Pinchred chili powder (to sprinkle on top before steaming)
  15. For Tempering (Tadka):
  16. 1 tbspoil
  17. 1 tspmustard seeds
  18. 1 tspsesame seeds (optional)
  19. 2green chilies, chopped
  20. 2green chilies, whole
  21. 1 tspchopped curry leaves
  22. 2 tbspwater
  23. 1 tbspsugar
  24. 1 tbsplemon juice
  25. For Garnish:
  26. leavesFreshly chopped coriander
  27. Freshly grated coconut (optional)
  28. For Tangy and Spicy Green Chutney:
  29. 2 cupscoriander leaves (with stems)
  30. 2 cupsmint leaves (optional)
  31. 1 inchginger
  32. 5garlic cloves
  33. 8green chilies (adjust to taste)
  34. Salt to taste
  35. 1 tsporganic jaggery powder (or sugar)
  36. 1 tbsproasted chana (or 1 tsp thick curd)
  37. Juice of half a lemon
  38. 1 tbspchaat masala
  39. 3ice cubes (to retain color)

Total Time: 35–40 minutes

    For Dhokla:

    ▪︎ Soak & Blend Dal:
    Soak moong dal for 3–4 hours. Drain and blend with green chilies, ginger, garlic, curd, water, sugar, and salt into a smooth batter.

    ▪︎ Rest the Batter:
    Transfer to a bowl and rest for 60 minutes for light fermentation.

    ▪︎ Add Fruit Salt:
    Grease or line a shallow pan with baking paper. Just before steaming, add Eno and lemon juice to the batter. Mix gently in one direction—batter will fluff up.

    ▪︎ Steam the Dhokla:
    Pour the batter into the prepared pan, sprinkle red chili powder on top, and steam for 15–20 minutes or until a toothpick comes out clean. Let rest for 5 minutes.

    ▪︎ Prepare Tempering:
    Heat oil. Add mustard seeds, sesame seeds, curry leaves, chopped and whole green chilies. Turn off heat and cool slightly. Add 2 tablespoons water, lemon juice, and sugar to the pan. This lemon-sugar water enhances softness and flavor.

    ▪︎ Garnish & Serve:
    Grease a knife and cut the dhokla into pieces. Pour tempering evenly. Garnish with coriander and coconut.

    For Tangy and Spicy Green Chutney:
    (Perfect Dip for Dhokla, Snacks, and Chaats!)

    ▪︎ Wash and prep all ingredients.

    ▪︎ Add everything to a blender: coriander, mint (if using), ginger, garlic, green chilies, roasted chana, jaggery, lemon juice, chaat masala, salt, and ice cubes.

    ▪︎ Blend to a smooth, thick chutney. Add cold water only if needed.

    ▪︎ Taste and adjust seasoning. Store in an airtight container in the fridge.

    Tips:

    Add grated veggies like carrot or spinach to dhokla batter for extra nutrition.

    Ice cubes in chutney help retain its bright green color.

    Leftover dhokla? Just steam or microwave with a sprinkle of water before serving.

    Serving Suggestions:

    Serve the Yellow Moong Dal Dhokla warm or at room temperature with a generous side of Tangy Green Chutney.

    Great for snacks, breakfast, or tiffin.

    Can also be part of a larger Gujarati-style thali.

    Chutney can be used with samosas, sandwiches, pakoras, chaats, or stirred into yogurt for a cooling dip.
