In a large bowl whisk flour, sugar, baking powder and sea salt. Set aside.

In a medium bowl whisk milk and egg, then add melted butter and vanilla extract. Stir to combine.

Add wet ingredients to flour mixture and combine with a spatula (note: the batter will be thick).

Heat frying pan on medium low heat, then add about 1 teaspoon coconut.

Once melted add ¼ cup of batter and cook until bubbles near the center start to pop, flip then cook for about another 30 seconds.

Repeat adding more oil as needed.
