Taiwanese popcorn chicken (鹽酥雞) is a popular Taiwanese street food made of bite-sized pieces of marinated chicken, deep-fried until crispy, and often tossed with basil leaves, cayenne pepper, and white pepper.

You can make this in the air-fryer and while it's not exactly the same as the deep fried version, it still comes out crispy, juicy, and full of flavor without the extra oil and mess!

Ingredients

  1. 1 lbchicken thighs
  2. 1/2-1 tbspsoy sauce
  3. 2 tspshaoxing wine
  4. 1 tspwhite pepper powder
  5. 1/2 tspfive spice powde
  6. 1/2 tspsugar
  7. 1 tbspminced garlic
  8. 2 tspgrated ginger
  9. 1egg white
  10. Thai basil
  11. coarse potato starch
  12. cooking oil spray
  13. Seasonings to Sprinkle on
  14. cayenne pepper
  15. chili powder
  16. white pepper

Cooking Instructions

    All the ingredients needed in photo form.

    Cut chicken thighs into bite size pieces.

  3. 3

    Marinate chicken with soy sauce, shaoxing wine, white pepper, five spice, sugar, minced garlic, grated ginger, and egg white for a minimum of 30 mins in the fridge. The longer the better.

    Coat each piece in coarse potato starch. Spray with cooking oil. Arrange chicken in a single layer, do not overcrowd.

    Preheat air-fryer and air-fry at 375F for 5-6 mins on each side.

    Spray basil leaves with cooking oil and air-fry at 375F for 2-3 mins OR you can also air-fry basil the last 2 mins with the chicken.

    Sprinkle a dash of cayenne pepper and white pepper and mix. Just like how you would sprinkle them on when you order popcorn chicken at boba shops!
