Steps

First grind the kaaju/cashew nuts into a fine powder in a mixer grinder. And the grinding process is as follows: Grind the kaajus for 3 seconds, then pause, again grind for 3 secs. then pause. In this manner grind the remaining cashews.

Now put this powdered cashews over the strainer as shown below and strain it to get a smooth powder.

Now take a pan, add sugar & water. Then switch on the gas and wait till the sugar gets melted. Now let the sugar boil until it forms one or single string like consistency.

Now slowly and gradually add the powdered sugar in it. Keep stirring continuously or it may form lumps.

Mix them well & cook it in a low flame for about 10 mins. Now add a tbsp ghee, elaichi powder & cook it for 5 mins again until the mixture gets accumulated in one place or the mixture starts sticking to the pan.

It will form dough like consistency as shown below in the image. Keep the flame low while stirring.

Now remove it from the pan and let the dough cool down little bit. Now divide the dough into 3 equal parts and add food colour in it and knead the dough well once again as shown below. Now make 3 separate colour balls and join them together gently to get a single big ball as shown.

Now take 2 plastic sheets. Grease them with some ghee or oil. Now place the dough on it. Gently press the ball once. Place the second plastic sheet over it and roll it like a thick paratha as shown.

Apply some silver foil on top of it. Cut the sides of it. With the help of the scale put lines diagonally on top of it to form a diamond shape as shown. Now grease a sharp knife with some oil or ghee and cut it with the help of the knife.

Remove the extras. Do all the above work before the dough gets cool down completely or else it would be difficult for you to give them proper shape. Place the barfis on a platter and serve them as required.
