Adai is usually made with lentils and rice, but I made it without rice only mixed lentils. Some wanted cheese, some only onion, few needed plain amd few wanted vegetable. So I made assorted as per family members demand.

Soak all lentils together in water overnight.

Soak dried red chillies in water for 5 minutes.

Drain lentils and grind with soaked chillies to a fine paste.

Add salt and black pepper, mix well to make the batter.

Lets make assorted adais. For plain mini adai pour a ladle full on hot pan and let it be a bit thick flip and cook from both sides. Add oil if required.

To make onion miji adai, pour a ladle full of batter, sprinkle onion on it. Cook weel from both sides

To make vegetable mini adai, pour ladle full batter,and sprinkle mixed vegetables on it. Flip and cook well from both sides.

To make cheese mini adai, pour ladle full batter sprinkle mixed vegetables, onion, cook from both sides and add grated cheese and cover cook for 1 min.

Relish these assorted mini adai with chutney as your evening snack.
Tips
For extra flavor, you can add spices like cumin or coriander powder to the batter.
