We , Gujaratis love to use french beans or fansi in our vegetable.Be it Punjabi Subjis like Kadai Vegetable , mixed veg korma or Gujarati vegetables like fansi - ma - dhokli , fansi - gajar nu shak , or rice dishes like Pulao , Biryani or Fried Rice .
As it is a world wide fact that Gujaratis are Farsan Lovers & we crave for farsan in any form. When green peas are not in season we find an alternative to it . So here is a recipe that does not use green peas but French Beans to make our Most Famous Snack ---- Ghughara , a unique dish with very few spices & that too what is available at home.

Steps

Heat oil in a broad non stick pan & add the onions.& green chillies. Saute onions for a minute.

Add french beans, green chilli - ginger paste & salt & saute again on a medium flame for 1 minute.

Switch off the flame & cool a little. Add crumbled paneer & chopped coriander & mix very well. Keep aside.

For the outer layer : Make semi - soft dough using chilled water. Cover & rest the dough for 10 minutes.

After resting the dough, take 1/2 tsp oil & knead the dough till smooth. Make equal size 15 portions from it. Cover the dough so it does not become dry.

Take 1 portion of the dough & roll it the size of a puri. Put the stuffing on the semi circle & press well. Make a design on the pressed side as shown in the picture.

Make rest of the Ghugharas the same day. Keep them covered till frying time.

Heat oil in a pan. Deep fry Ghugharas on a medium flame till golden from all sides.Remove on a kitchen towel.

On this Ganesh Chaturthi, serve these delicious & unique Ghugharas with green chutney, Prasad & other knickknacks & celebrate the arrival of GANESHJI with elated & joyful heart.

Note : You can semi - fry these Ghugharas & store them in the freezer section of the refrigerator for a month. Remove a few as & when required & deep fry in hot oil on a high flame.

Also for festivals, you can prepare these Ghugharas in a day or 2 in advance & store them in the refrigerator. Fry them as required.
