My Pink Kajukand

Many of you must have enjoyed Kajukanda as kids and some of us enjoy it even as adults. Once you try these homemade ones, you will never buy the store variety. They are easy to make, not at all time-consuming and definitely heaps tastier.

Many of you must have enjoyed Kajukanda as kids and some of us enjoy it even as adults. Once you try these homemade ones, you will never buy the store variety. They are easy to make, not at all time-consuming and definitely heaps tastier.

Steps

Initially make cashew powder into mixture jar.

Heat pan or kadhai with thick base. Add 2 tsp ghee. Then add grated coconut. Stir little. Then add sugar. Combine both well. Cook the mixture for about 10 min.Then add milk into the mixture. Stir again. The mixture starts boiling. Cook for few minutes. Now add fine sooji. Mix all ingredients well and cook on low flame. Now mixture has thickened.

Sooji has cooked now. Then add red rose food color & 4 drops of vanilla essence. Mix the pink color & essence well with the mixture well. Mixture turns into pink color. Cook for 4-5 minutes.

Now add powdered cashews into cooked coconut & sooji mixture. Combine all ingredients well. Stir continuously on low flame until mixture thickens.

Grease plastic paper with ghee. Spread plastic paper on table top or on floor. Turn gas off. Let allow the mixture to lower it's temperature. It takes about 10 min. In the meantime continue with stirring the mixture in the pan. So that it turns warm uniformly.

Let us check the mixture. Take very small portion of mixture, roll it with fingers, if it won't stick to the finger & makes little ball, then at this stage the mixture is ready to spread on plastic paper. Transfer mixture on greased plastic paper. Place another plastic paper on it. Roll very gently with rolling pin. Roll as per you like the thickness of kajukand.

Once rolled, let it allow to cool for about 30 min. Then cut into small sqares(vadi) as you like. Take out ready kaju kand vadi. Transfer these kajukand into a container. You may keep it into freeze. Enjoy these delicious home made kajukand. You may try this kajukand as a prasad for ganesh bappa.
