Ingredients

15 minutes
2 servings
  1. 1cucumber,
  2. 2 tbsp.peanuts
  3. 2 clovesgarlic, chopped
  4. 1 tbsp.sesame seeds
  5. 1/2 tsp.chilli flakes
  6. To taste, salt
  7. 1 tbsp.olive oil
  8. 1 tbsp.lemon juice
  9. 1 tsp.honey

Steps

15 minutes
  1. 1

    Thinly slice the cucumber and cut in batonnet. Place in a bowl.

  2. 2

    Dry roast the peanuts. Check for a peanutty aroma. Cool and crush and add to bowl with cucumber.

  3. 3

    Dry roast the sesame seeds till lightly brown. Add to the cucumber.

  4. 4

    In a small bowl add the garlic, salt, chilli flakes and mix.

  5. 5

    Heat olive oil for 3 minutes. Pour the hot oil over the garlic.

  6. 6

    Mix in the lemon juice and honey. Mix well.

  7. 7

    Drizzle the dressing over the cucumber and mix well.
