First boil the milk and keep it aside. Now take a pan, heat 1 tbsp of ghee, when the ghee melts add chopped cashews and fry it for about 10 seconds. Keep this aside. Then fry the raisins and keep it aside too.

Now take a deep pan. Add the leftover ghee in it then add 1 tbsp of ghee in it. Once the ghee melts add the sevai in it and fry them on a low flame for about 20 seconds.

Then add the boiled milk to it. Let if cook for about 10 minutes. Then add fried nuts & grated jaggery in it. Mix everything well. And cook for 5 more minutes. Add a pinch of salt to balance the sweetness.

Check if the sevai is cooked properly. Then finally add some elaichi powder and mix it. Cook for another 2 minutes.

Now switch off the flame. Let it cool down completely then keep it in a refrigerator for about an hour or two. Then serve it chilled or hot, whichever you like.
