In a bowl, pour in the warm water and milk. Add the sugar and active dry yeast, mix well, then cover and let the yeast activate for 5 to 10 minutes.

Next, add the semolina, flour, salt, and olive oil.

Knead by hand or with a stand mixer for 10 minutes.

Form the dough into a ball, cover with a kitchen towel or plastic wrap, and let it rise for 1 hour until it doubles in size.

Punch down the dough, divide it in half, and shape each piece into a ball.

Place the dough balls on a greased baking sheet and flatten them gently with your hands.

Cover the bread with a kitchen towel and let it rise again.

Once the bread has risen, brush with the egg yolk mixed with 2 tablespoons of milk, then sprinkle with sesame seeds, poppy seeds, or any seeds you like.

Bake at 400°F (200°C) for about 20 minutes, or until the bread is golden brown.
