Ingredients

about 20 minutes
2 loaves
  1. 570 gramsfine semolina (about 3 1/2 cups)
  2. 100 gramsall-purpose flour (about 3/4 cup)
  3. 2 tablespoonsactive dry yeast
  4. 2 tablespoonssugar
  5. 1 tablespoonsalt, leveled
  6. 190 mlwarm water (about 3/4 cup plus 1 tablespoon)
  7. 260 mlwarm milk (about 1 cup plus 1 tablespoon)
  8. 50 mlolive oil (about 3 1/2 tablespoons)
  9. For finishing:
  10. 1egg yolk
  11. 2 tablespoonsmilk
  12. Bread seeds (I used sesame and poppy seeds)

Steps

    In a bowl, pour in the warm water and milk. Add the sugar and active dry yeast, mix well, then cover and let the yeast activate for 5 to 10 minutes.

    Next, add the semolina, flour, salt, and olive oil.

  3. 3

    Knead by hand or with a stand mixer for 10 minutes.

  4. 4

    Form the dough into a ball, cover with a kitchen towel or plastic wrap, and let it rise for 1 hour until it doubles in size.

    Punch down the dough, divide it in half, and shape each piece into a ball.

  6. 6

    Place the dough balls on a greased baking sheet and flatten them gently with your hands.

  7. 7

    Cover the bread with a kitchen towel and let it rise again.

  8. 8

    Once the bread has risen, brush with the egg yolk mixed with 2 tablespoons of milk, then sprinkle with sesame seeds, poppy seeds, or any seeds you like.

    Bake at 400°F (200°C) for about 20 minutes, or until the bread is golden brown.
