Potato salad with pickled cucumbers and green peas

A wonderful quick salad that can be the base for a more complex dish. For example, you can add mushrooms, fried or pickled, and use fresh peas instead of canned. It'll be a delicious, original salad every time. But even in this minimalist version, it's a wonderful, self-contained dish.
Cooking time does not include boiling potatoes.
