Yummy Creamy Spinach and Mushroom Orzo
This tasty dish is a quick and easy Italian-inspired pasta, that can be made in just 30 minutes entirely in one pan. Serve it as a vegetarian main dish or a side dish with chicken or fish. #CA2025

Heat the oil in a large pan and cook the sliced mushrooms on medium heat for 2-3 minutes until nicely browned. Season with salt and pepper.

Add the uncooked orzo, chicken stock, minced garlic, Italian seasoning, smoked paprika and pinch of salt to the mushroom. Cover and bring to a boil, then simmer on medium heat for 10 minutes. Stir it from time to time to prevent orzo sticking to the bottom.

Add the spinach during the last 5 minutes of cooking the orzo. Pour in the cream, stir well but do not bring it to boil. When ready to serve, sprinkle more paprika and chilli flakes. Enjoy.
