Craving a hearty soup that's a little different and so delicious!

Wash the broccoli. Set aside 2 or 3 florets for garnish and slice the rest thinly. Peel, wash, and grate the carrots. Slice the reserved broccoli florets thinly for garnish.

Chop the onions and prepare the chicken broth (I use homemade). In a large pot, melt the butter with the olive oil and sauté the onions until soft.

Cook the onions until they're soft but not browned. Add a heaping tablespoon of cornstarch, stir, then pour in the chicken broth. Whisk well, cook for 5 minutes, then add the heavy cream, broccoli, and carrots. Season with salt and pepper.

Simmer gently for 25 minutes (do not let it boil), allowing the soup to thicken.

Meanwhile, brown the bacon bits and the sliced broccoli florets in a pan.

Set aside the bacon and broccoli slices for garnish.

After 25 minutes, add the shredded cheese and cook until fully melted. Taste and adjust seasoning as needed.

Serve the soup topped with some bacon bits, 2 or 3 slices of broccoli, and a few homemade croutons (see linked recipe).
