Prepare the Yam :-

Peel the yam and cut into small cubes.
Wash thoroughly and boil with salt until soft.
Drain the water and keep aside. - 3

Temper the Oil :-

Heat mustard oil in a pan.
Add bay leaf, hing, cumin seeds and green chilli.
Let it splutter for aroma. - 6
Add the Yam :-

Add the boiled yam cubes to the pan.
Stir gently and let them coat with the oil. - 8
Add Spices :-

Add coconut pieces, grated ginger, turmeric powder, cumin powder, sugar and salt.
Pour approx. ¼ cup water to help spices combine well. - 10

Slow Simmer :-

Cover the pan.
Cook on low flame till yam absorbs flavours and turns soft. - 13
Finish with Ghee & Lemon :-

Add ghee and switch off the flame.
Sprinkle lemon juice and mix gently. - 15

∆ You can also pair with phulka / roti for a simple meal.

Tips
∆ Mustard oil gives the dish its authentic flavour—avoid replacing it.
∆ Boiling the yam first removes stickiness and cooks it evenly.
∆ Adding a little sugar balances the earthy flavour of yam.
∆ Adjust the water based on how thick you want the gravy.
Coconut pieces add great texture—don’t skip them.
