  1. 500 gmsOl / Elephant Foot Yam / Suran / Jimikand
  2. 2 tbspCoconut pieces
  3. 2 tbspMustard Oil
  4. 2small Bay Leaf
  5. 1 pinchHing (Asafoetida)
  6. 1 1/2 tspCumin Seeds
  7. 1Green Chilli
  8. Salt to Taste
  9. 1 tbspGrated Ginger
  10. 1 tspTurmeric Powder
  11. 1 tspCumin Powder
  12. 1 tspSugar
  13. 1 tbspGhee
  14. Lemon Juice – to taste

Steps

Prep +Cook : 20–25 min.Total Time: 30 minutes

    Prepare the Yam :-

    Peel the yam and cut into small cubes.
    Wash thoroughly and boil with salt until soft.
    Drain the water and keep aside.

    Temper the Oil :-

    Heat mustard oil in a pan.
    Add bay leaf, hing, cumin seeds and green chilli.
    Let it splutter for aroma.

    Add the Yam :-

    Add the boiled yam cubes to the pan.
    Stir gently and let them coat with the oil.

    Add Spices :-

    Add coconut pieces, grated ginger, turmeric powder, cumin powder, sugar and salt.
    Pour approx. ¼ cup water to help spices combine well.

    Slow Simmer :-

    Cover the pan.
    Cook on low flame till yam absorbs flavours and turns soft.

    Finish with Ghee & Lemon :-

    Add ghee and switch off the flame.
    Sprinkle lemon juice and mix gently.

    ∆ Serve hot with steamed rice (best traditional combo).

    ∆ You can also pair with phulka / roti for a simple meal.

Tips

∆ Mustard oil gives the dish its authentic flavour—avoid replacing it.

∆ Boiling the yam first removes stickiness and cooks it evenly.

∆ Adding a little sugar balances the earthy flavour of yam.

∆ Adjust the water based on how thick you want the gravy.

Coconut pieces add great texture—don’t skip them.
