Rinse poha thoroughly with water, then let it rest for 5-10 minutes.

Heat oil in a pan. Add mustard seeds and let them splutter. Add curry leaves and green chilli, sauté for a few seconds.

In the same pan, add peanuts, potato, onion, carrot, and green peas. Sauté until soft.

Add soaked poha, salt, and sugar. Mix gently to combine.

Keep lid over it and cook for 2 minutes. Serve warm.

Hot Aalu poha is ready to serve.
Tips
For added flavor, you can garnish with fresh coriander and a squeeze of lemon juice before serving.
