Carrot and ginger soup is rich in beta carotene and ginger gives warmth to the body.I have made it Creamy by adding cashew nuts.

Heat oil in a pressure cooker,add garlic,onion,ginger and carrot.Saute for 3-4 min.Add water,salt,cumin,black pepper, cashew nut and turmeric powder.Close the lid and give it a whistle,cook it on medium heat for 6-7 min.Let it cool.

Strain the soup.Grind all the veggies,add soup and strain.Cook it for 3-4 min.

Your Creamy carrot and ginger soup is ready to serve.Serve it hot.Garnish it with coriander leaves and cashew nut pieces.Enjoy!
