Ingredients

1hr 30 minutes
4-6 ppl
  • 1fish of choice about 10-12 inches long
  • Marinade for fish :
  • 1 tspsalt (pink)
  • 1 1/2 tspfenugreek, fennel, turmeric
  • 4green cardamom
  • Sauce for stew:
  • 10small to medium tomatoes
  • 2-3small - medium onions
  • 6large cloves minced garlic
  • 1-2scotch bonnet peppers
  • 1 inchpiece of fresh minced ginger
  • 1/2nutmeg
  • 1star of anise
  • 1 tsprosemary
  • 1/4 tspred pepper seeds
  • 2-3 tspsalt (per your taste)
  • 2maggi cubes (I used chicken)
  • 1 tspblack pepper
  • 2 tspfennel,fenugreek and coriander
  • 3bay leaves
  • 1 tsp5 spice
  • 3 tbspsesame oil
  • 1medium package of tomato paste
  • 2 cwater (1c at a time)
  • 1chicken breast bone in optional
  • 1 1/2 cupcooked beans of choice
  • 2 crice (cook as required)
  • 4 tbspthe oil from frying fish I add to the rice when cooking

Steps

  1. 1

    Clean fish thoroughly. Cut into pieces. Blend all the spices and coat the fish evenly and set aside in refrigerator. I put mine in a bag until ready to use.

    For the sauce for stew: take tomatoes onions garlic ginger and scotch bonnet peps into a blender and blend until smooth and pour into a pot and set aside. Take all the seasonings and blend until no lumps and add to the sauce. Add the maggi and chicken breast for flavor. Turn the sauce on medium heat and cover.

    Get out your fish and fry in a seperate pan until golden brown on both sides. I have just enough oil to cover halfway up with fish.

    Once golden take out and set aside.

    Pic of the chicken breast in the sauce 👇 when finished cooking I will keep for another recipe. Add the tomato paste and stir it well. Add 1c water cover again and turn up heat to medium and add a pinch of baking soda to cancel out the acid and cover.

    Stir as needed. The sauce should condense to a nice thick consistency. Add more water if needed.

    Add the fish to sauce and the sesame oil and stir it together. Remove the chicken for the next day. Taste your sauce and adjust flavors as needed. Plate and serve 😃 make yourself a joyful evening enjoy!!

Tips

I add baking soda for the reason of the acid which can cause acid reflux or heartburn for anyone sensitive to acid in citrus from tomatoes.
