Thinly slice the mustard greens and rinse well with water.

Finely chop the shrimp. Sauté the chopped shrimp with a little oil, minced shallot, and a pinch of salt.

Bring a pot of water to a boil. When the water is boiling, add the sautéed shrimp and mustard greens. Season to taste. Once the soup comes back to a boil, taste and adjust the seasoning again, then turn off the heat. Serve hot with rice.
