Crockpot Collection: Lucky New Years Meal - Barbecue, Black-Eyed Peas, and Collard Greens

My family has always had the belief that eating pork, peas, and greens would bring health, wealth, and fortune in the New Year. This year, I made a feast of pork tenderloin barbecue, seasoned black-eyed peas, and a heap of collard greens to obtain good luck in 2026. Happy New Year! #january2027
Steps
- 1
If frozen, thaw pork tenderloin in the refrigerator. Wash tenderloin and dab with a paper towel. If frozen, thaw collards in the refrigerator. Set out barbecue sauce to reach room temperature.
- 2
Place pork tenderloin in the slow cooker, covering the top with vegetable oil to help seasoning stick. Add brown sugar and spread evenly over the tenderloin.
- 3
Add paprika, chili powder, garlic powder, ground black pepper, ground mustard, onion powder, salt, cayenne pepper, and crushed red pepper. Using your hands, spread seasonings evenly over the tenderloin.
- 4
Add water around the sides of the tenderloin, only until beneath the top of the tenderloin. Don't pour over the seasonings.
- 5
Allow pork tenderloin to cook on high in the slow cooker for roughly an hour, adding water as needed.
- 6
Turn the slow cooker on low and allow to cook for seven-eight hours until tender and cooked through, checking every hour or hour-and-a-half. Add water as needed.
- 7
Once done, shred the meat with two forks. Add the Sweet Baby Ray's barbecue sauce to the shredded pork and stir until fully combined.
- 8
For the black-eyed peas, clean the peas thoroughly. Place the peas into a bowl of cold water and allow them to set until they've soaked up all the water.
- 9
Once they've soaked up the water, place the black-eyed peas into a separate slow cooker and add water until peas are covered.
- 10
Add salt, pepper, and seasoning salt, allowing peas to cook on high for about two-three hours. Keep an eye on the water, as the peas soak up water fairly quickly.
- 11
Turn the slow cooker on low and allow the black-eyed peas to cook for another one-two hours or until thoroughly cooked. Add a splash of the broth created by the pork tenderloin in the other slow cooker.
- 12
For the collard greens, add the collard greens to a pot and add water.
- 13
Add the butter and seasonings, allowing the collards to come to a rapid boil.
- 14
Once boiled, turn down to low and allow to simmer. Cook until fully done and slightly tender. Drain water if needed.
- 15
Once cooked, add a splash of broth from the pork tenderloin.
- 16
Enjoy your Lucky New Years Meal and the New Year! 🍽️
