Steps

Prep Greens :-

Wash spring onion greens and dill leaves thoroughly. Drain and chop. Keep fresh tuvar dana ready.

Heat the Base :-

Heat oil in a kadhai, add cumin seeds and let them crackle. Add asafoetida and chopped green garlic. Saute briefly.

Add Greens :-

Add chopped spring onion greens and dill leaves. Saute for 2 minutes on medium flame

Add Tuvar & Spices :-

Add fresh pigeon peas. Add turmeric, coriander–cumin powder and salt. Mix well.

Cook the Sabzi :-

Add 1/4 cup water, mix, cover and cook for 5–7 minutes or until tuvar becomes tender.

Fresh Chilli Tempering :-

Heat 1 tsp oil in a small tadka pan. Add fresh red chilli paste and sauté for a few seconds until raw smell disappears. Pour this tempering over the sabzi.

Finish & Serve :-

Mix well, cook for 2 minutes, turn off flame and serve hot.

Tips
∆ Don’t overcook dill — colour & aroma should remain fresh.
∆ If tuvar is not very tender, add a little extra water.
∆ Tempering with fresh red chilli gives natural colour & flavour.
∆ Add a pinch of sugar if using mature tuvar (optional).
