First, ready all ingredients.Heat 2 cups of water,add some salt,2 pinch sugar and bring to a boil. Add in the green chanas. Cook in open pan for 5 minutes and strain off the water. Reserve this nutritious water for later use.

Garlic Paste: Pound garlic,jira, chilli powder and some salt.

Curd Masala Mix: Into the curd mix Garlic Paste, haldi, chilli powder, dhanajira and some salt.

In mixie crush spring onion white,chilli, ginger and tomatoes to a smooth paste. In oil saute the 100 gms paneer cubes and keep it in a plate. Keep the colour of paneer white.

In same oil add in the khada masalas,rai,jira and hing.

Add in besan and saute for 2 minutes on slow gas.

Add in the Curd Masala Paste. Stir and cook for 2 minutes. Now add in the Tomato -onion paste. Add salt

Mix,cover lid and cook until well done and oil separates. Grate the remaining 100gms paneer and chop spring onion greens.

Add the boiled green chana,sauted paneer and spring onion greens. Also add in some grated paneer and mix.

Add in the reserved hot boiled chana water and set the desired gravy consistency.

I made Bajra Rotla to serve this delicious recipe. Crumble hot rotlo and top with some Green Chana Sabzi.

Garnish with grated paneer, spring onion greens,green chana. Drizzle some chilli -garlic oil. This Sabzi has the perfect Indian flag tricolours.

I also served it as Winter Special Thali. We enjoyed the Desi Dhaba Style meal on th Republic Day.

Tips
1. Boil green chana in open pan to retain the green colour.
2. Stir continuously after adding curd to avoid splitting of the curd.
