Chia seeds are great for puddings because of their ability to absorb liquid and create a gel-like consistency. This quality along with their fiber helps keep a balanced digestive system, preventing sugar blood spikes and providing sustained energy. They also support bone health by providing essential nutrients such as calcium, magnesium and phosphorus.
They are a delicious light breakfast option for home or on the go.
Notes:
- I used whole milk but you can substitute it for a plant based milk such as almond milk or coconut milk.
- I used maple syrup but you can substitute it for honey, agave or sweetened condensed milk.
- Fell free to add other toppings or fruits such as mango, raspberries, or nuts.

Steps

Assemble all ingredients.

In a small container, add 1/2 cup milk, 2 tbsp of chia seeds and 1 tbsp of maple syrup or honey. Mix until well combined

Store covered in the fridge overnight or for at least 2 hours.

Before serving, give it a good mix and add diced strawberries and blueberries. Delicious !
Tips
Substitute the sweetener for 1tbsp of sweetened condensed milk to make it extra delicious 😋
