Ingredients

30 minutes
6 servings
  1. 6-8potatoes, baby/medium, boiled
  2. 1onion, diced
  3. 1 cupchickpeas, boiled
  4. 2 tbsp.cilantro, chopped
  5. As required, green chutney
  6. As required, sweet tamarind chutney
  7. As required, chilli garlic chutney
  8. 1 cuppomegranate arils
  9. As required, fine sev
  10. 1lemon, juiced
  11. As required, chaat masala
  12. To taste, salt
  13. 1 tsp.chilli powder

Steps

30 minutes
  1. 1

    Boil the potatoes till tender but firm. Cool and peel.

  2. 2

    Cut in equal halves, further cut the tip of potatoes to make a base. Use a scoop spoon or a small size spoon to scoop out the potatoes and make cavity, reserve the scooped-out potatoes to make the filling.

    Place on serving plate and sprinkle chaat masala.

  4. 4

    In a bowl add the chickpeas, onions, scooped potatoes, cilantro and lemon juice. Mix well.

  5. 5

    Season with salt and chaat masala.

  6. 6

    Add pomegranate and mix well.

  7. 7

    Fill the boiled potatoes cavity with the filling, top with green chutney, chilli garlic chutney and tamarind chutney.

    Garnish with sev and pomegranate arils.

    Serve immediately.
