Wash both the pulses, soak them in water and keep them aside for 3-4 hours to swell. Once they swell, remove the water, add an ice cube and grind them finely.

Now whisk this lentil paste with your hand or with the help of a spoon in one direction for 10-15 minutes until the lentils become light.

Fill a steamer with water and let it steam. I steamed these vadas in a small bowl. You can make them in whatever container you prefer.

Fill half the bowl with lentils and let it steam for 12-15 minutes.

I made some vadas in an idli stand. Beat the curd and mix sugar in it.

Keep a bowl of curd aside and put a piece of beetroot in it and keep it for 5 minutes so that it turns red in colour.

Pour water in a vessel, heat it, add salt and asafoetida in it and keep these vadas in it for 10 minutes to swell. Before keeping these vadas for steaming, mix soda in this lentil paste.

Place these vadas on a plate, pressing them down lightly with your hands, and then top with yogurt, green chutney, sweet chutney, and roasted cumin powder. I also sprinkled finely chopped sev on top. You can eat them comfortably because no oil has been used in them.
