Upside-Down Orange Cake 🍊

Zest the orange, then slice it into thin rounds.

Cook the orange slices with sugar and water to make a syrup.

Drain the orange slices and set aside the syrup to soak the cake after baking.

Make the caramel by heating 1/2 cup sugar with 2 tablespoons water.

Pour the caramel into the bottom of the cake pan.

Whisk the eggs with 80 grams (about 1/3 cup plus 1 tablespoon) sugar, vanilla, salt, and orange zest.

Add the milk and oil, then sift in the flour and baking powder and mix until smooth.

Arrange the orange slices over the caramel.

Pour the batter over the orange slices.

Bake the cake at 350°F (180°C) for 35 to 40 minutes.

Remove the cake from the pan as soon as it comes out of the oven, then soak it with the reserved syrup.

Let the cake cool to room temperature, then refrigerate for at least 3 hours before serving.
