Heat oil in a pan, add mustard seeds and let them crackle.

Add cumin seeds and curry leaves, sauté for a few seconds.

Add green chilli and ginger, sauté briefly.

Add onions, cook for 2 minutes until slightly soft.

Add mixed vegetables and capsicum, cashews cook for 2–3 minutes.

Add turmeric powder and salt, mix well.

Add washed oats and raisins, mix gently.

Cook on low flame for 3–4 minutes, stirring occasionally.

Turn off heat, add lemon juice, mix well.

Garnish with coriander leaves and serve warm.
