Baked Potatoes with Manchego Cheese and Tzatziki

A recipe you can make in the oven, or now that the good weather is coming, you can also prepare it on the barbecue. It's very tasty and loved by both kids and adults.
You can vary the recipe by filling the potatoes with whatever you like, tuna, chicken,... I love cheese, so that's what I used. It's important to use quality cheese with flavor.

Tzatziki sauce originates from Greece. That's why Greek yogurt is used to make it. There, they combine it with meats, fish, and vegetables or even appetizers. It's a sauce you won't get tired of dipping into, and it gives our potatoes a wonderful fresh touch. You can also use regular yogurt, just make sure to drain the whey well. Although the final result is not as creamy, it's just as delicious.

If the potatoes are small, serve 2 per person. If they are large, maybe just 1, depending on how hungry you are.

Ingredients

  1. 8medium potatoes (2 per person)
  2. 7 ounces (200 g)grated semi-cured Manchego cheese
  3. extra virgin olive oil
  4. salt
  5. a fewthyme leaves
  6. 1/2 cup (100 ml)Tzatziki sauce:
  7. 2Greek yogurts (about 9 ounces or 250g)
  8. 1medium cucumber (unpeeled)
  9. 1/2 clovegarlic (germ removed)
  10. 1 tablespoonolive oil
  11. juice of 1 small lemon
  12. 2 tablespoonschopped fresh mint (or spearmint)
  13. pinchpepper

Steps

    Make the Tzatziki first. Wash the cucumber well and grate it. Lightly salt it and leave it in a strainer or colander to drain the water. In a bowl, mix the yogurt, olive oil, finely chopped garlic, lemon juice, chopped mint, and a pinch of salt and pepper. Add the well-drained cucumber and stir to mix everything. Let it rest in the fridge while you prepare the potatoes. It will develop more flavor and be much tastier.

    Preheat the oven to 480°F (250°C).

    Clean the potatoes thoroughly with plenty of water. Dry them very well and coat them in a mixture of olive oil and thyme. Wrap in aluminum foil and bake in the oven for 60 minutes, depending on the oven and the size of the potatoes. Check the cooking by inserting a knife into the potatoes.

    When they are ready, open the foil and slightly cut the potatoes in the center with a knife. Fill with cheese and put back in the oven until the cheese is melted and slightly golden.

    Remove the potatoes from the oven again and pour the Tzatziki sauce over them.

    Serve hot in their aluminum foil.
