Ingredients

  1. 1/3 cupolive oil
  2. 1/4 cupvinegar
  3. 1 tsp.dried oregano
  4. To taste, salt
  5. To taste pepper powder
  6. 1 tsp.lemon zest
  7. 1 tbsp.lemon juice
  8. 1 tbsp.mint, chiffonade
  9. 1 tbsp.cilantro, chopped
  10. 2potatoes, boiled, peeled
  11. 1/4 cuprotisserie chicken, shredded
  12. 1/4 cupcucumber, deseeded, chopped
  13. 6-8cherry tomatoes, halved
  14. 2 cupsgreen olives
  15. 3boiled eggs, peeled, wedges

Steps

  1. 1

    In a bowl add olive oil, vinegar, oregano, salt, pepper powder, lemon zest and lemon juice. Whisk to combine.

    Cube the potatoes and add to the dressing. Toss to coat.

  3. 3

    Add the chicken, cucumber, tomatoes to the potatoes and mix well.

  4. 4

    Add olives and egg, reserve some wedges for garnish, mint and cilantro. Mix gently..

  5. 5

    Serve chilled with reserved egg wedges
