After my mother-in-law was discharged from the hospital, she was still feeling weak and had grown tired of the usual khichdi and dal-rice.
I wanted to make something light yet different in taste.
With love and care, I prepared this comforting Dudhi Rice — soft, gentle on the stomach, and full of homely flavors .
She truly enjoyed every bite, and her smile made it all worth it.

Preparation :
Wash the rice 2-3 times and soak it in water for 20 minutes. Meanwhile, peel and grate the bottle gourd. Keep the grated dudhi in a bowl of water so it doesn't turn brown.

The Tempering (Tadka) :
Heat 2 tablespoons of ghee in a pressure cooker. Once hot, add the cumin seeds, bay leaf, and a pinch of hing. Let them splutter and release their aroma.

Adding Spices :
Lower the flame and add turmeric powder, red chili powder, and salt. Saute for just a few seconds to cook the spices without burning them. - 4
Mixing Rice & Veggies :
Drain the water from the soaked rice and grated bottle gourd. Add them to the cooker. Gently sauté for 1 minute so the ghee coats every grain of rice.

Adding Water & Herbs :
Pour in 2 cups of hot water. Using hot water ensures the rice stays fluffy and doesn't get mushy. Stir in the freshly chopped coriander leaves. - 6
Pressure Cooking :
Close the lid of the pressure cooker. Cook for 2 whistles on medium flame. Turn off the heat and let the pressure release naturally before opening. - 7
Serving Suggestion :
Pair this light meal with plain chilled curd, a bowl of kadhi, or even some roasted papad. It’s the perfect "healing meal" for someone recovering or just a quick, healthy dinner.
Tips
∆ Rice Texture : Always drain the bottle gourd properly before adding to the cooker to maintain the perfect rice texture.
∆ Mild Version : For elderly or recovering patients, keep the chili powder minimal.
∆ Freshness : Always use fresh, tender bottle gourd for the best natural sweetness.
