True Icelandic cloud bread usually refers to Rúgbrauð, a traditional, dense, dark, and sweet rye bread. Often called "thunder bread" (þrumari), it is traditionally baked in a pot or special cask buried in the ground near a hot spring (hverabrauð) for 12–24 hours.

Steps

Separate 3 eggs into 2 different bowls.

To the egg whites, add 1/2 tsp baking soda and pinch of salt.

Using an electric mixer, mix the egg whites until stiff peaks form.
--test by turning the bowl upside down. If nothing comes out, it's done correctly. - 4
Add 4 1/2 oz cream cheese to the yolks.

Using electric mixer, beat the yolks/cream cheese mixture until pale yellow and has bubbles.

Gently fold the egg whites into the yolk mixture in thirds.

Spoon the batter into parchment lined tray, making nine (9) mounds.
--gently shape the mounds (round) without pressing down. We want to keep all the air inside. - 8
Bake at 149°C (300° F) for 20-25 minutes until tops are golden and shiny.
--all ovens are different. Start checking at 20 min mark to prevent burning.
Tips
Serve warm
Serve with ham and cheese or with plain Skyr
