Did not follow a Recipe , only had too remind myself how too make egg Pasta . The Recipe is for very many little portions of Lasagne , so a large batch of Bolognese Sauce made with cooked beef mince in - and then the separate large batch of homemade Bechemel Sauce , did add Coarse Sea Salt too act as a Preservative during storage in the Fridge . Does take a long time too prepare , so can make the Bolognese Sauce One day and then the next day - do the Bechemel Sauce and then the Third day make the homemade Egg Pasta Dough Ball

Ingredients

  • 2large Brown Onions
  • 2-4 tbsp.Olive Oil
  • 250 gLean Beef Steak Mince
  • 250 gfatty Beef Mince
  • 2× 400g Plum Tomatoes (Mutti Brand, maybe)
  • 400 mlCold tap water
  • 8 pinchesCoarse Sea Salt
  • 12turn grinds of Black Peppercorns
  • For the Bechamel Sauce
  • 200 gblock Unsalted Butter
  • 200 gPlain Flour
  • 3 PintsPasteurized Cow Milk
  • 4generous pinches Coarse Sea Salt
  • For the egg Pasta
  • 6hen egg yolks
  • 2whole hen eggs
  • 400 gPlain Flour
  • Several tbsp. Cold tap water too bring together

Steps

  1. 1

    Make the homemade Bolognese sauce with the raw beef mince, need too cook the raw beef mince and so need too peel the 2 large onions and then cold water wash them and then roughly chop with a small sharp kitchen knife into the stainless steel frying pan etc. Add 2 tablespoons olive oil and then shallow fry on the lowest hob heat for 10 minutes

    Add the 500g of raw beef mince to the frying pan and then fry on the highest hob heat for 10 minutes and keep turning and moving around with a large flat wooden spoon and then add the 2 tin's of plum tomatoes and then gradually add 400ml of cold tap water. Do add the salt and black pepper

    For the homemade Bechamel sauce add 200g block of unsalted butter too a stainless steel frying pan etc. and then melt the butter on the lowest hob heat and then add the 200g of plain flour over the top and then use the flat wooden spoon too bring together and then gradually add the whole 3 pints of pasteurized cow milk 3 × 600ml keep stirring whilst on the lowest hob heat. Add the coarse sea salt once cooked, must cool before putting in fridge

    For the egg pasta add 6 hen egg yolks too a metal mixing bowl and add the egg white's too your other food mixing bowl. Add 2 whole hen eggs too the egg yolks and then beat with a dinner fork and then add the plain flour - can add 200g of bread flour and 200g plain flour, can be all cheap plain flour. Add to Kenwood food mixing bowl, add Kenwood dough hook attachment and then automatically mix and with a little bits of cold tap water it will come together

    Boil some cold tap water in a large saucepan. Take a section of one's homemade raw egg pasta and then use a machine too roll equal thin sheets of raw lasagne pasta and then place in the boiling hot water. Add your cold cooked Bolognese sauce to the bottom of a small lasagne baking tin or ceramic baking tin and then add partially cooked lasagne sheets and then add another layer of Bolognese sauce and then more lasagne sheets over the top and then add your layer of cold cooked Bechamel sauce

    Bake in the oven at either Gas Mark 6 or 7 and heat through for at least 30 minutes. Nearing the end of oven cooking time - can add grated mature Cheddar cheese over the top - melt it briefly in the oven, or could use Parmesan cheese instead. Could garnish with basil leaves, finely chop some with a small sharp kitchen knife

Not perfect for a first attempt . Need a smooth thick liquid Bechemel Sauce, So a bit of congealed Bechemel Sauce needs to be cooked through with some milk in a Stainless Steel Frying Pan etc. or a new non-stick Frying Pan
