Smoked Salmon Stuffed Rice Paper Pillows

I got inspired by a smoked salmon canapé I tried at a Japanese-Peruvian fusion restaurant. I also wanted to try these trending rice paper pillows.
Perfect starter for a refined menu, or a canapé for a large crowd.

I got inspired by a smoked salmon canapé I tried at a Japanese-Peruvian fusion restaurant. I also wanted to try these trending rice paper pillows.

Steps

In a bowl, mix the yukari furikake into the cream cheese and whip until creamy. Refrigerate (overnight if possible).

Preheat the oven to 180°C.

Fill a shallow pan with water. Briefly dip one rice paper sheet and transfer to a flat surface. Lightly oil the surface if needed.

Repeat with the second rice paper sheet, and layer over the first rice paper sheet. IMPORTANT - use an icing spatula or bench scraper to smooth out any bubbles in between.

Bake in the oven for about 8-10 mins, or until fully puffed up.

Transfer the whipped cream cheese into a piping bag and fill the rice paper pillows.

Top with cucumber, smoked salmon, and garnish with yuzu furikake, lime zest and black sesame seeds. Enjoy!
