350°F. prep a 9-inch tart pan with nonstick spray.

In the bowl of an electric mixer, cream the butter and brown sugar, until fluffy.

Stir in the egg, until just combined.

Stir in the maple syrup and vanilla, until combined.

Stir in the granola, flour, cinnamon, and salt.

Press the mixture into the prepped tart pan. Cover with parchment and weigh down with pie weights. Bake for 15 minutes, until golden brown. Let cool.

In a medium bowl, stir together the cream cheese, confectioners' sugar, lemon juice, and lemon zest. Set aside.

In a large bowl with a hand mixer, whip the heavy cream, until stiff peaks form.

Fold the cream cheese mixture into the whipped cream. Pour into the cooled crust, spreading evenly.
