Make the Sauce - I just a small blender and put everything in an pulse - you can just chop all finely and put into a jar and shake to combine. Put in Fridge until ready to serve.

10 mins before you want to eat, Take you cleaned prawns from fridge and wrap in pc of salmon. Place on a serving dish and pour over the sauce. Allow to ceviche for 10 mins then garnish with the corriander (and Bitter Gourd) and serve. Great with a cold beer as SPICY :P ENJOY :P
