This is a perfect Thai Salad, Quick to make, packed with flavour and great a part of a full Thai Meal. We normally have this (and a few other dishes) for a nice beer night - so good.

This is a perfect Thai Salad, Quick to make, packed with flavour and great a part of a full Thai Meal. We normally have this (and a few other dishes) for a nice beer night - so good.

Make the sauce - I just a small blender and put everything in and pulse - you can just chop all finely and put into a jar and shake to combine. Put in fridge until ready to serve.

Mix the pork and soy and let marinade for 20-30 mins. Prepare a bowl with warm water next to your hob and boil one pan of water to a simmer. Cook pork in 3 batches and into the water. Mine only takes 1.5-2 mins until outside is cooked and inside JUST cooked. DO NOT OVER COOK. Put into the warm water to remove any "scum" that collect the put onto kitchen paper to drain. (you can put into fridge until ready to serve)

Put a layer of cabbage on your serving plate then put the pork ontop. Pour the sauce over and then arrange lime / garlic and coriander around. Serve with crunchy veg (Kale recommended) and eat immediately with a cold beer - SPICY :P ENJOY :P
