These cookies are crunchy on the outside and soft on the inside. Reminds me of eating a cinnamon roll with all this cinnamon flavor going on with these delicious delightful bites 🎉

In a bowl mix oil and sugar. Add semolina and stir well. Add one egg and the white from the second egg.

Set the yolk from second egg aside for later. Add cinnamon.

Add vanilla, salt, baking powder, five spice and mix.

Add the flour until it comes together. If you put your finger down in it the imprint will stay. Let sit in fridge for 5 minutes.

Pre heat oven to 180c. Take about 1 and a half tbsp of the dough and roll into a ball and then flatten just a little. Put on a cookie sheet. Take a knife and lightly cut lines as below into each one.

Take the yolk and scramble. Using a pastry brush or fingers brush some on top of each cookie. Bake 13-15 mins depending on your oven. Check after 10 mins. Bottoms should brown.

Take out of the oven and spoon onto each cookie while hot the simple syrup. Let them cool or eat em warm but enjoy these amazing little morsels and bet you can’t eat just one 🎊 Enjoy your day !
