Soak oats in a bowl with plenty of water, about 5c. over night
oats get tender, increase in quantity while soaking. Soaking removes phytic acid which is not good for absorption of certain nutrients.
Drain, cook with 5c-6c of water over medium heat, about 5 minutes. Stir in a 1/4tsp cinnamon powder. Let cool - 4
Take 2c of prepared oats in a bowl. Add curd, veggies, methi sprouts. Mix

This is what gives the unique taste, flavor and aroma to the dish. Over medium heat in a saucepan heat oil. Pop mustard seeds. Then stir in cumin seeds, tender curry leaves, and green chilies. Stir in asafoetida, a minute. Turn off the stove. I did this in a microwave

Add the seasoning to the bowl with oats curd veggie mix. Chill it if possible.
You may garnish with mint leaves, cilantro leaves or more methi sprouts to enhance the aroma. Tasty oats blend with curd and veggies is ready to serve
