Wash flattened rice and keep it in a colander for 5 minutes to soften. Peel and mash boiled potatoes. Mix wet poha and potatoes in a mixing bowl.

Add chopped onion, coriander leaves, green chili, peas and grated ginger. Add salt, red chili powder, shahi chaat masala, carom seeds and garam masala and mix well.

Mix till it become a dough. Now take a portion of mixture and make a ball. Then flattened it on your palms like a tikki. Likewise make all the cutlets.

Heat cooking oil in a skillet. Place cutlets over it and shallow fry till crispy golden brown colour. Flip the side and fry from another side also.

Remove the cutlets to a plate.

Serve hot with green chutney and tomato ketchup.
Tips
Poha should be dry before mixing in mashed potatoes. You can add more vegetables too, like carrot and capsicum.
