Ingredients

About 30 minutes
4-6 people
  • 1 poundsmelts
  • 1 cflour
  • to tasteSalt n Pepper
  • 3/4 coil vegetable or canola is best
  • Angel Hair Pasta
  • Enough to cover pastawater
  • to tastesalt
  • 9 clovesgarlic
  • 1/4 coil

    This is a very easy dinner! In a frying pan add oil to a medium heat. In a Ziploc bag add flour, salt and pepper to taste. Add some fish and shake them around to coat the fish very well.

    When the oil is hot enough, test by putting a pinch of flour in the oil, if it sizzles immediately it’s ready to fry.

    Add the smelts but not crowded so they brown evenly. Once lightly brown remove and put onto paper towels to soak the oil up. Finish frying all fish. Add to paper towels. Set aside.

    In a medium pot on high heat add salt to water to your liking. When water boils add angel hair. Cook until al dente. Before straining all the water from the pasta reserve 1/4c. Strain the rest. In the same pan add 1/4c oil and smash the 9 cloves of garlic and fry them on medium high until dark brown (almost burnt) and I apologize I have forgotten to take pics🤦‍♀️. Turn to med low toss in the angel hair until completely covered with oil add the remaining pasta water. Fry for 2 mins turn off.

    Add Parmesan cheese to your pasta if you desire

    I made homemade bread to eat with mine 🤩. Plate all and add parsley if you desire but get ready for a mouthful of deliciousness!

Tips

You need 4 arms to make it all at the same time. So I recommend the fish first since the pasta could possibly get too soggy. There’s no need for deboning either.
