I was inspired to make some chicken varuval when I was watching this NZ documentary series called Neighbourhood. Almost two years prior to watching one of the episodes, K and I were at a cultural event, when we bumped into this particular Malaysian man who was among the many people who was part of the series. He and his wife made some chicken varuval that had a blend of India and Malaysia in it. I was then inspired to make some Indian style Chicken Varuval. I had a whole chicken in the fridge, and I had all the spices needed, so I took off to the kitchen and began the marination process

Ingredients

  1. Chicken chicken : 1/2 a cut into bite size pieces
  2. 1Onion : sliced thin
  3. 3 clovesGarlic : mashed
  4. 2 sprigsCurry leaves :
  5. 5Chillies Dried :
  6. 3Cardamom :
  7. 2 inchsCinnamon : stick
  8. 2 tbspsChilli Powder :
  9. to tasteSalt pepper and
  10. Oil for frying
  11. Marinade:
  12. 1 tbspGinger Paste :
  13. 1 tbspGarlic Paste :
  14. 1 tspTurmeric Powder :
  15. 1/2 tspCoriander Powder :
  16. 1 tspCumin Powder :
  17. 1 tbspMasala Meat : (Shaan brand)
  18. Salt Pepper and

Steps

  1. 1

    Combine the ingredients of the marinade. Add the chicken pieces to it and mix well to combine. Marinate for 4 hours or even overnight

    When you are ready to cook, add the chicken pieces to some heated oil and fry until it is golden brown. I didn't deep fry the chicken, so make sure you don't pour lots of oil. Once nicely browned, remove from the pan and set aside

  3. 3

    Return the pan to the stove and have about 2tbsp of oil in the pan and saute the onion and mashed garlic. Saute until it is lightly brown. Next add the curry leaves, the dried chillies, cardamom and cinnamon. Continue to stir until it is nicely fragrant. Next add the 2tbsp of chilli powder and give it all a good stir. Finally in goes the chicken. Stir well to combine. Season with salt and pepper. If its too dry, add a few tbsp of water

    I served this along with some fried rice. Coconut rice will taste great too
