Easy Sweet Potatoes Easy Sweet Potatoes
We went to Sebring yesterday to run errands and we stopped at a little roadside produce market. That is one thing I absolutely love about Florida. Fresh on demand. He had the prettiest little sweet potatoes, straight out of the ground. Today, I roasted chicken and baked the sweet potatoes. This is almost nothing but heavenly and there’s never leftovers. Low Country Boil (with a Cajun flair!) Low Country Boil (with a Cajun flair!)
I'm a huge fan of Crawfish Boils and love when they are in season from April to early July. But during the rest of the year I really miss it and the Low Country Boil seems to tide me over until April comes again. But I make it taste a lot like a Cajun Crawfish Boil using the same spices and oils. It comes out spicy (as it should) and is very tasty. Leftovers are just as good! #mycookbook Boca de Fogo -

Chicken Pochero Chicken Pochero
I never liked beans; but over time I grew to love them. I ESPECIALLY like anything simmered in tomato sauce. Here’s a terrific fusion of the two; another Filipino household favorite.PS: Grandma likes to pan-fry the potatoes, chicken, and plantains ahead of time to get some color on the outside, but it’s purely for aesthetics. This version doesn’t do that - but you can totally do it grandma’s way if you like :) Cheryl
