Penne in Creamy Tomato Sauce

I was facing a midweek crisis at work and a visit to the dentist was scheduled for the evening... It could not have got better than this!
It is at such times that I find myself daydreaming (yes.. I do that a lot at work) about my dinner...more often than not, thinking about food acts therapeutic for me and takes away the day's stress.
The hot sultry weather was a deterant in having to cook anything heavy n spicy. My thoughts wavered to the packet of whole wheat pasta that had caught my eye while rummaging through the kitchen in the morning.
So pasta (specifically penne) it was for dinner!
Appointment and all done, it was time to savour my favorite meal of the day!

Steps
- 1
Take the whole wheat pasta and cook it until al dente. Do not drain all the water
- 2
Finely chop the garlic and white onion
- 3
In a saucepan take 2 teaspoon of vegetable oil (you could also use olive oil) and saute the finely chopped garlic until the onion turns translucent
- 4
Finely chop the tomatoes and add it to the saucepan. Cover and cook until the tomatoes turn into a sauce like consistency
- 5
At this point you can add a little of the pasta water. This is one tip I picked up from the net, it adds to the thickness of the sauce
- 6
Add the sugar, salt n paprika and continue to cook with lid covered
- 7
Once the sauce is of the consistency you like (I like mine wherein I can still bite into the tomatoes) add the basil
- 8
Add the milk and let it simmer for a minute, overcooking may cause the milk to curdle. The milk balances the acidic tomato and also increases the thickness of the sauce
- 9
Plate the pasta and pour the sauce over it.
- 10
Top it up with a lil grated cheese and drizzle olive oil
