Heat oven to 200C and place the cut peppers on a baking tray (cut-side up). Let them cook for 5 - 7 minutes until they soften slightly.

In the meantime, heat some oil in a panover a medium flame and sauté the onions and garlic until they are golden brown.

Add the tomatoes, peas, corn and olives and mix well.

Add the cooked rice, salt and chilli powder and cook for a couple of minutes. You can usecouscous/brown rice if you like. Set this aside.

You now need to prepare the bechamel (white sauce).Melt 1/2 tablespoon butter in a saucepan andadd flour and cook the mixture for a minute.

Now, stir in milk, a little at a time. Ensure to stir well so that no lumps are formed.

Cook this mixture till it thickens and season with salt and pepper.

Mix the vegetable mixture to the bechamel sauce and stuff the peppers halves with this mixture and add some cheddar and mozzarella cheese on top.

Bake these for 5-10 minutes till the top is nice and golden.
