Super tempting and is a must perfect side dish for every Oriya and Bengali lunch thalis. Andthere are a lot of variations to this recipe. In an authentic version, brinjal pieces are mixed with some spices andshallow fried in mustard oil.

Super tempting and is a must perfect side dish for every Oriya and Bengali lunch thalis. Andthere are a lot of variations to this recipe. In an authentic version, brinjal pieces are mixed with some spices andshallow fried in mustard oil.

Wash and cut the brinjals into half and then further make slits into two centimeters.

Sprinkle turmeric, red chili, coriander, cumin powder and salt on both sides of the brinjal slices with li'l oil.

Toss well such that spice mix gets uniformly coated to each slice.Marinate it for 5-10 min.

Heat a frying pan or tawa and grease it nicely with li'l oil.Place the brinjal slices on the tawa.

Cook on medium-low flame for 4-5 min or till both sides are cooked and crispy. Drizzle some more oil if required.

Drain onto an absorbent paper. and serve hot.
