Those lazy mornings when I feel like getting done with breakfast quickly, I make Veggie Idlis. Again a hit with my cuties. :)

Mix sooji, curd, water, chilly powder and salt to make idli batter and let it sit for 15 mins

Add eno salt and water if needed. The batter should be of medium consistency

Grease idli moulds and put the batter. Steam for 12 mins.

Heat oil in a kadhai, add mustard seeds, curry leaves and green chilly. Add veggies, sambhar powder and salt and sautee at medium flame for 5 mins.

Remove idlis and cut them into half/quarter pieces. Put them in the kadhai and mix properly.

Serve with coconut chutney
