Oats Raisin cookies with coffee

Oats and raisin cookies are new favourite here. I made this other day a friend tried these and she didn't believed it's home made. With hint of coffee flavour they taste divine and I bet you can't stop eating at one. Dunk them in a glass of milk n you have a full filling snack on the go. As these are loaded with butter calories it's good to have them in limited quantity only if you can ;) for me I have to hide box myself in cabinet and forget that I made those. They are so yummy and offcourse better than store bought ones.
Here I have tried making cookies in a little bit of healthier version. If you omit butter calories than nothing else is bad or unhealthy in it. Oats ,raisins ,whole wheat flour , cane sugar and flax seeds all counts for healthy stuff. It's eggless also so again a good option for vegetarians like me who don't take eggs. Coffee flavour added a good punch to it. Try it out and get back to me how they turned out will be happy to hear you.

Mix 2 tspn of coffee powder with 3tbsp water add 1 tbsp of flaxmeal mix it n keep it aside for 5- 10 minute. Mix it to get gelatinous mixture

Take butter (I used home made unsalted ghee) at room temperature beat it for a minute add castor sugar beat it well then add cane sugar beat it well with beater till light and fluffy.

Pre heat oven to 170 degree, line a baking sheet with parchment paper.

Add coffee mixture to it mix well. Add baking soda mix again.

Add oats, whole wheat flour, raisins n mix well and form a soft dough.

Shape dough into small balls and place it on baking sheet, keep some distance in between cookies, flatten a little bit with palms and bake in preheated oven for 15 minutes.

Keep an eye on cookies after 10 minutes if they start to brown from base they are done remove from sheet n cool on wire rack. At first they will be very soft but will ferm up once cooled down.
