Coconut,lime and Basil Bavarois Pie

Tropical and light version of a bavarois with both heavy cream and coconut. Set with some gelatine. The crisp mint and lime make this a perfect summer pie.

Crush the 200grams of biscuits to a fine consistency. Not too powdery. Once crushed add the 50 grams of butter in fine cubes and start kneading the dough, add the coconut water in portions to make sure the dough is moist enough to hold together well. Set the dough aside in the fridge to cool down.

Carefully rasp the outside of the limes and aim to not cut any of the white lining with it as this is very bitter. For even more flavour you can grind the lime zests finer in a mortar. Add the juice of the two limes in there also.

Line a pie form with baking paper, and preheat the oven at 180 degrees. Place your dough into the mold and make sure to spread out well. Poke some very small holes in the base to avoid any trapped air during baking. Once set add it into the preheated oven and bake until golden brown.

Once the pie crust has been baked let it cool down and set it into the freezer (the cooled down base will help with setting the pie filling later on.

In a pot add only the heavy cream of the coconut milk (to separate the water from the cream you can set it in the fridge for half an hour). Add in the basil leaves to let them seep for flavour. Bring the coconut milk to about 60 degrees celsius. Then let your gelatine sheets soak in cold water for 5 minutes before adding them to the coconut cream and mixing through well. You can also add the lime zest and juice to it.

Once the gelatin sheets are completely dissolved turn of the heat and allow the mixture to cool down slowly at room temperature.

Next add your whipping cream into a bowl and start whipping it until you see soft peaks form, here you can optionally add the heavy cream stabilizer. Once your coconut mixture that has been cooling down reaches about a bit warmer than luke warm you can start adding it into the whipped cream. Poor it through a seive into the cream instead.

Carefully fold the mixture together and avoid whipping it at this stage. Once well incorporated you can pour the mixture into the pie crust that has been sitting in the freezer. Once this has been done you can add the whole pie back into the freezer and move on to the top layer.

For the top layer we are going to add the 50 ml of heavy cream, 50 ml of coconut cream, and lime juice into a pot and bring to 45 degrees celsius. We are also going to soak our gelatine sheets in cold water again before dissolving them in the mixture.

For an extra green color we are going to add about a full teaspoon to two teaspoons of ceremonial grade matcha. Mix the mixture extremely well already in the pot.

Once all ingredients are combined we are going to again pour this mixture through a sieve into a mixing bowl and let it cool down. Once fully cooled down we are going to whip it like we do with regular whipping cream but we can stop well before soft peaks start to form.

Once done retrieve your pie from the freezer, the main layer should still be soft enough to pour the top layer on top. For this pie I did it in a circular pattern on top and then used a skewer to create the fish grain pattern on top. You do this by dragging the skewer in lines over the surface.

Once happy place it back into the freezer for another hour or two, then it will be set and it can go into the fridge, be further decorated on top or stored in the freezer until when ready for eating.
