Chicken Sopes

This is my mom's recipe, and my son loves it. Sopes are a traditional Mexican dish. The classic version is made with refried beans, thinly sliced lettuce, shredded cheese, and salsa. Sopes are very versatile and can be served with a variety of toppings.

This is my mom's recipe, and my son loves it. Sopes are a traditional Mexican dish. The classic version is made with refried beans, thinly sliced lettuce, shredded cheese, and salsa. Sopes are very versatile and can be served with a variety of toppings.

Knead the masa with a little water and use a tortilla press to form tortillas.

Cook the tortillas on a griddle or skillet.

While still hot, pinch the edges of the cooked tortillas to form a rim for the sope. Set aside in a basket.

For the salsa: Cook the tomatillos, serrano pepper, onion, and garlic. Blend them in a blender. Season in a saucepan with hot oil. Add the shredded chicken and the sprig of epazote. Add salt to taste.

On the same griddle or skillet, fry the sopes on both sides with a little oil. Top each sope with the chicken salsa mixture and garnish with crema and cheese.
