Rice with Kofta (Manal Alalem Style)

In a food processor, finely chop the onion, garlic, and parsley until almost a paste. Add this mixture to the ground beef, then add black pepper and cumin. Shape into small balls, then brown them in a little oil or air fry until cooked through.

Add the saffron to the melted butter, then microwave to infuse.

In a skillet, add the sliced onion with the saffron butter.

Cook until the onions are soft and golden.

Thinly slice the cabbage.

Add the cabbage to the onions.

Stir until the cabbage softens and blends with the onions.

Add the cilantro and dill.

Stir, then set aside.

To prepare the rice, parboil the rice with turmeric, salt, and oil until halfway cooked, then drain.

Now, layer the rice and the onion-cabbage mixture in a pot.

Add the kofta, making 3 or 4 layers as you like until all ingredients are used.

Top with the remaining rice, cover, and steam on low heat until fully cooked.

Now, turn the rice out onto a serving platter.
